For example, the law firm I rent office space from was moving and they had a seemingly infinite amount of confidential client records from the previous several decades. They didn't need the records anymore, in fact many of the clients were probably long since dead. They could have had the secretaries feed the documents into paper shredders, which probably would have taken weeks or months, and possibly burnt out a few shredders, but this obviously wasn't an attractive solution. For starters, there were probably several tons of records that needed shredding!
Instead, they hired an on site document shredding service. A large truck containing industrial strength mobile shredders arrived along with several burly men, who spent close to a week carrying boxes of documents to mobile shredders and processing them in the parking lot. It was relatively fast and certainly very convenient.
You can easily find local on site document shredding services via the yellow pages or by doing a quick online search. In most locations you'll have several options and can compare their services and prices.
Off site document shredding services are another option. Your documents are taken away whole and then shredded. This might be an option but be certain to check compliance with any privacy laws that apply to you.
